I'm Sophia, the creator of Pour Over Mate and a pour-over coffee enthusiast.
Whenever I visit a new city, I look for its specialty coffee shops. I love watching how different baristas brew, and I often bring home beans from local roasters—each with its own recipe and approach.
For a long time, every new bag made me change everything again: grind size, water temperature, ratio, pouring technique.
One day, I brewed an unexpectedly wonderful cup. The aroma was clear, the acidity and sweetness felt beautifully balanced, and it was exactly the kind of coffee I wanted to make again.
But the next morning, I couldn't.
I didn't know what I had done right—or what had changed.
Later, a barista helped me understand the problem: when too many variables change at once, it becomes almost impossible to know what actually changed the taste.
So I began brewing differently. I recorded the details that mattered, changed one variable at a time, and used each cup to decide what to try next.
Gradually, a good cup stopped feeling like a lucky accident. I learned to understand what I was tasting, reproduce the coffees I loved, and develop preferences of my own.
